Nigel Slater shares soothing broth recipe that's perfect for October

Nigel Slater has shared a recipe that's "full of warm and freshness" and perfect for this time of year. With autumn now upon us, Britons are beginning to dust off their overcoats and accept that colder conditions are on the way.

When temperatures turn, there's nothing quite like a warm, comforting home-cooked meal to look forward to. It's a time of year that's perfect for soups and broths to dunk a bit of buttered bread into, and Slater has revealed a dal recipe perfect for just that.

Writing for The Observer, the food writer and broadcaster said last week he made "a sweet, aromatic dal that had the dried moong beans that are so useful in autumn, together with the last of the green beans: a dish where late summer met early autumn".

Slater cooks up a dish that features moong dal (dried split mung beans) with coconut milk and lime leaves, sugar snap peas, climbing beans, and runner beans, and various other ingredients and to create a hot, invigorating broth.

Other ingredients can be used if runner beans aren't available like long-stemmed broccoli, or asparagus when its in season. It can even work with white cabbage if need be.

Meanwhile, a healthy eating expert recently shared a "power and glow immunity" soup recipe that could be a godsend for the chillier nights ahead.

In a video that went viral on Instagram, Arash Hashemi, demonstrated how to prepare the soup as he peeled carrots and roasted them with onion and plenty of garlic.

"These are loaded with antioxidants and your body turns them into retinol, which gives you and your skin that extra glow," he said.

He seasons carrots, garlic and onions with curry powder, paprika, salt and black pepper before roasting them in olive oil.

Once they're roasted, they're are added to a blender with ginger and tofu or cottage cheese, as well as some bone broth and some lemon and chilli flakes.
